Smoked Salmon Hampers for Rosh Hashanah

Smoking started off as a way of preserving fish for longer in the days before refrigeration, but, on arrival in Scotland, the Eastern Europeans who perfected the technique found that it was could produce something delicious when paired with premium Scottish salmon. These fish were said to get their unique flavour from their high muscle density, because they needed to be strong to swim upstream in cold waters.
On Rosh Hashanah, many families traditionally serve a whole, cooked fish. The head is said to symbolise the coming of the new year.
