Lemon Curd, Popcorn & Primrose Cake


This lemon curd cake recipe is very moist and easy to make. Serve a slice with a warm tea and share with friends and family – it's even a much appreciated birthday cake.

Ingredients:
For the CAKE: 250g unsalted butter
250g self raising flour
250g caster sugar
4 eggs
zest of two lemons
2tbsp milk
For the TOPPING: 250g lemon curd
50g butter
150g icing sugar
1tbsp cream
1 tsp vanilla extract
popcorn, a handful
primrose
Method:
Beat sugar and butter and combine other ingredients. Bake at 180°C for 25 mins. When out, squeeze over the juice of half a lemon on each half. Fill with lemon curd. Make a lemon buttercream icing with 50g butter, 150g icing sugar and 1tbsp cream and 1 tbsp lemon curd and 1 tsp vanilla extract. Spread the buttercream icing n the top of the cake and finish with handful of popcorn and primrose.
